Banana Nut Muffins

I’ve been looking for a recipe box for several weeks now and I have finally found the perfect one at a local bookstore. I’m so pleased with it and have already gathered all of my baking recipes in one place (as opposed to all the scattered papers with notes and corrections written all over them!). Now with each new post in the Recipes series I will be able to add a new recipe card to the box. Here’s a new one: Vegan Banana Nut Bread Muffins.

Vegan banana nut bread was the very first baking recipe I ever tried when I became vegetarian. I really loved having fresh banana bread for breakfast or dessert. It was also the first recipe I shared my friends and clients of Walley Films, and I always received really positive reactions.

Vegan Banana Nut Squares detail

Vegan Banana Nut Squares

  • 2 1/2 to 3 ripe bananas
  • 1 cup raw sugar
  • 1/3 cup water
  • 1 tsp baking soda
  • 1 1/2 cups whole wheat flour
  • 1 cup chopped walnuts
  • Optional: 1 to 1 1/2 cup vegan semi-sweet chocolate chips (I use Enjoy Life brand)

Mix ingredients in order listed, mixture will be similar to pancake batter. Pour or spoon the mixture into small muffin pans. I used a shallow square pan, but you can easily use a loaf pan, just be sure to keep the batter shallow or it will not cook all the way through. Bake at 350 degrees for 30 minutes. Let cool and enjoy – perfect for breakfast, dessert or snack!
